  1. Place sweet potatoes in a pot and cover with cool water. Add Kosher salt and bring to a boil. Reduce heat and simmer until tender and the skins start to split. Carefully lift sweet potatoes out of water and allow to cool until they can be handled safely.
  2. While sweet potatoes are cooking, peel and slice the apples. Saute with the butter, sprinkle with the brown sugar and cinnamon. Cook slowly until just tender. If using nuts add them to the apples and stir.
  3. Peel sweet potatoes and mash with 2 tablespoons butter, add the nutmeg and a splash of milk if needed. Place in an oven proof casserole dish and arrange the cooked apple slices and nuts on top.
  4. Bake at 325 - 350 for about 30 minutes.
  5. This can be made ahead of time and refrigerated and then heated prior to serving. (Remove from refrigerator about 1 hour prior to baking.)
