For the Salmon
  1. Preheat oven to 400 degrees F. Line baking sheep with parchment paper or foil.
  2. Combine brown sugar, paprika, onion and garlic powder, salt, oregano, thyme, black pepper, and cayenne pepper in a small bowl.
  3. Brush salmon portions with olive oil. Sprinkle the rub over the salmon generously coating all surfaces. Place salmon on a sheet pan lined with parchment paper.
  4. Bake for 10 to 15 minutes, until fish flakes easily.
For the Citrus Salsa
  1. Combine diced oranges, green onion, red bell pepper, cilantro, salt and jalapeno. Salsa can be made ahead and refrigerated until ready to serve.
  2. Plate salmon topped with the Citrus salsa.
Recipe Notes

Don't let the number of ingredients in the rub scare you off.  It is easy to put together in a couple of minutes or can be made in advance to have on hand at all times.

Simple roasted asparagus can be cooked on the same sheet pan as the salmon & will cook in the same amount of time.

  1. Oh Brenda, it is really good and so fast too. I hated salmon, my father ruined salmon for me, but recipes like this helped to convert me to a salmon lover! Sweet, Spicy and Citrus too – delicious!
