This recipe has been a regular in our house for so long that I don't even remember where it originated from. There was a time when my friend Judi and I would make dozens of mini loaves every year to hand out through the holiday season. I have amended the recipe to use some applesauce in place of some of the oil.

  1. Pre-heat oven to 350 Grease and flour three 4 x 8 loaf pans
  2. Sift flour, soda, cinnamon, salt, nutmeg into a bowl, set aside.
  3. In a mixing bowl beat together sugar, applesauce, oil, eggs, water and pumpkin.
  4. Add dry ingredients to the wet ingredients and stir to combine. Divide batter between the loaf pans.
  5. Bake at 350 for about 50 - 60 minutes. A toothpick inserted in the center should come out almost clean.
Recipe Notes

The original recipe calls for 1 cup oil. I have been using half oil and half applesauce and it works very well. Chopped nuts may be added if desired.
