Instructions
  1. In a large bowl, combine tomatoes, onion, cilantro, cucumber, celery, salt, jalapeno, Mexican tomato sauce, and salt. Stir to combine.
  2. Halve, pit, peel and dice one avocado. Sprinkle with lime juice and gently stir into tomato mixture. Refrigerate for 30 minutes to combine flavors.
  3. Just prior to serving, divide lettuce between 6 salad bowls. Divide the tomato shrimp mixture equally between the 6 salad bowls.
  4. Halve the remaining Avocado, pit, peel and slice. Sprinkle with salt and arrange on top of the salads.
  5. Serve immediately with tortilla chips on the side if desired.
Recipe Notes

If preparing more than 30 minutes in advance, wait to add theĀ dicedĀ avocado.
