  1. Preheat oven to 400°
  2. Place lean ground beef into a large mixing bowl, season with salt and pepper. Add the Panko crumbs. Do not stir yet.
  3. Place eggs, ketchup, milk all the vegetables, dry mustard and Worcestershire sauce into a blender. Pulse to get the mixture going, then run until everything is pureed.
  4. Add pureed mixture to the beef and Panko crumbs, Stir to thoroughly combine without over working the meat. (Gloved hands work well for this)
  5. Place meat into shallow baking dish and shape into a loaf. Bake at 400° for about 45 minutes or until the internal temperature is 160°. Allow meatloaf to rest for 15 minutes. Slice and serve.
Recipe Notes

Use any combination of vegetables.   Loaf can be baked on a foil lined sheet pan if desired.
