Instructions
  1. Heat oven to 350°.
  2. Mix thoroughly the flour, butter and powdered sugar. Press into an un-greased 8 x 8 pan building up a 1/2 inch edge. Using a fork, poke the bottom crust. Bake for 15 - 20 minutes, until lightly brown.
  3. Beat eggs, sugar, baking powder, salt, zest and lemon juice for about 3 minutes or until light and fluffy. Pour over hot crust.
  4. Bake at 350° for 25 minutes or until no imprint remains when touched lightly in the center.
  5. Cool and cut into squares.
Recipe Notes

I have made these in 6 individual tart pans, with the removable bottoms.

Bottled Key Lime juice is also perfect for making Key Lime squares / tarts.
