  1. Place carrots in a steamer basket, place over a couple of inches of boiling water. Sprinkle with a pinch of kosher salt. Cover and steam for about 10 minutes until just tender but still slightly crisp.
  2. * If preparing ahead - place steamed carrots into cold water to stop the cooking process, drain and refrigerate. Bring to room temperature prior to finishing with the glaze.
  3. Melt butter and olive oil in a large skillet over low heat; stir in honey. Add lemon juice and ginger and garlic if using. Stir to combine.
  4. Increase heat to medium and add carrots and toss until well coated. Continue cooking until thickened, about 5 minutes more.
Recipe Notes

As alternative to steaming the carrots, you can peel the carrots and place in a large skillet, add with just enough water to barely cover the carrots.  Cover and bring to a boil.  Reduce heat to medium and cook until barely tender.

Garlic is optional in this recipe and is a nice addition depending on your main dish.
