A cheap and easy soup that is filling enough for a main course. A great way to use up ham left over from your holiday ham, add any vegetables you have on hand and you have a complete meal. As always - the ingredients are easily changed up to what you like and have on hand.

  1. Place the potatoes and cauliflower in a large soup pot. Cover with broth. Bring to a boil then reduce heat to simmer.
  2. In a separate large sauce pan, melt butter. Add onions, celery, carrots, and garlic. Cook for 2 minutes. Add flour and cook over medium heat for a few minutes to cook the flour. Add cold milk a little at a time to the hot roux mixture, stirring until smooth. Add salt and pepper and simmer until the potatoes are tender.
  3. Once the potatoes are tender, pour the creamy mixture into the soup pot with the potatoes. Add the ham and corn, stir to combine. Simmer until the vegetables are tender. About 10 minutes.
  4. This is easily made ahead of time and kept on warm or low in a slow cooker. Newer slow cookers cook hotter than older models - I would recommend using the warm setting if your vegetables are tender and you are just 'holding' the soup.
Recipe Notes

*  Instead of broth you can use water with chicken bouillon or broth from a cooked ham bone.

*  Use more or less cauliflower, or just leave it out and add another potato.
