In my humble opinion Avocados might by natures most perfect food. Although perfect by themselves with a nice sprinkle of salt, this recipe elevates them to what might be the world's most perfect dip.

  1. Combine tomatoes, jalapenos, cilantro, onions, juice of 2 limes and salt. Stir to combine and set aside.
  2. Just before serving, cut avocados in half, remove seeds. Using a paring knife score avocado, scoop into a bowl. Sprinkle lightly with kosher salt and the juice of one lime. Coarsely mash avocado. Combine with tomato mixture. Stir to combine, adjust salt to taste.
  3. The lime juice will help prevent the avocados from browning but if you need to store this or transport it I suggest laying a piece of plastic wrap right on top of the guacamole and removing any air pockets.
Recipe Notes

Finley diced white onion may be used instead of green onions.

To easily remove the stems from the cilantro. Wash cilantro and lay it flat on a cutting board in a bunch. Hold onto the stem ends and using a fork, rake the cilantro with the tines of the fork. Most of the leaves will be raked off and the stems left behind.
