  1. Bring a large pot of salted water to a boil. Blanch peeled a prepared carrots in boiling water for about 5 minutes. Plunge into ice water to stop the cooking process.
  2. Remove carrots from ice water and store in the refrigerator if making ahead.
  3. Melt butter in a large saute pan over low heat. Add honey, lemon and ginger. Increase heat to medium and add carrots, toss to coat and warm the carrots about 5 minutes.
Recipe Notes

The carrots can be steamed 1 day prior to serving. Remove carrots from the refrigerator about 1 hour prior to finishing.
