These meatballs hold together well. They are small and partially precooked then simmered in the sauce. Simmered in pasta sauce in a slow cooker makes these perfect meatball sandwiches.

  1. Line a 6 quart slow cooker with a slow cooker liner for easy clean up, if desired. Pour prepared pasta sauce into slow cooker and heat on high while preparing the meatballs.
  2. Preheat oven to 450° Line a baking sheet with aluminum foil and lightly oil.
  3. In a large bowl combine, bread crumbs, milk, egg, Italian seasoning, olive oil, garlic powder and pepper flakes. Stir to combine well.
  4. Add ground beef and ground pork to the bowl. Season meat with salt, pepper and Parmesan cheese. Using gloved hands or a silicone spatula stir to mix well and combine all ingredients.
  5. Using a #30 scoop, (small portion) Scoop and form meat mixture into small meatballs. I use the scoop and then gloved hands to roll into the balls. Place meatballs on baking sheet. You can place them close together, just not touching. One sheet pan should hold all the meatballs.
  6. Bake at 450 for about 10 minutes. Remove from oven and allow to cool slightly. Place meatballs into prepared sauce in the slow cooker.
  7. Turn slow cooker to LOW and cook for about 1 hour. If they need to simmer longer that is OK.
