The beauty of this wonderful dish is that not only is it easy, it is impressive and can be prepped in advance and just finished in a hot oven for 10 minutes. I will confess, I have been known to eat half a cauliflower all by myself and call it dinner!

  1. Wash cauliflower and remove the large leaves but leave the core in place. Cut cauliflower in half. Pre-heat oven to 400°. Line a baking sheet with parchment paper or foil.
  2. Place a steamer basket over a saucepan with 1" of water. Place cauliflower in steamer basket, season with kosher salt. Cover and steam for about 10 minutes or until cauliflower is tender but still holds its shape. (Can be prepared to this point and finished later if desired.)
  3. Mix together 1/4 cup mayonnaise and 1 teaspoon curry powder.
  4. Once cauliflower is tender, set steamer basket aside and allow to cool slightly. Place steamed cauliflower onto prepared sheet pan. Using a basting brush, paint the entire surface of the cauliflower with the mayonnaise / curry mixture.
  5. Place coated cauliflower in preheated oven and roast for 8 minutes. Sprinkle grated cheese over the top of roasting cauliflower and return to oven for an additional 2 to 3 minutes until the cheese is melted and starting to brown.
  6. Remove from oven, allow to cool for a few minutes to allow the cheese to set.
