Instructions
For the Cake
  1. Pre-heat oven to 350°
  2. Sift together flour, baking powder, baking soda, salt and cinnamon.
  3. In a separate bowl beat together sugar, oil, eggs and applesauce.
  4. Add flour mixture to the wet ingredients and mix to combine. Do not over beat. Add carrots, pineapple and nuts. Fold to combine.
  5. Pour into 3 (9") round layer cake pans that have been greased and floured. Or one large 10 x 13" Pyrex pan.
  6. Bake at 350 35 - 40 minutes or until toothpick inserted in the center comes out clean.
  7. Remove from oven, cool a few minutes in pans. Turn out on wire racks and cool thoroughly before frosting.
Cream Cheese Frosting
  1. Cream together softened butter, cream cheese and vanilla. Add powdered sugar a little at a time and beat thoroughly until smooth and fluffy.
  2. If frosting is too thick to spread easily, add a little milk a few drops at a time.

About Baking Nana

Each morning my granddaughter Sarah calls to ask, "Watcha doing, Nana? Are you baking Nana?" Hence my "name" Baking Nana. I am a mother to three wonderful children and a grandmother to 12 very hungry grandkids. I don't bake fancy cakes but I do make wonderful yeast bread and home cooked meals made with love.

  1. Now I have an excuse to make this soon! I looked and could not find a picture! Can you imagine – 30+ years of making this and NO pictures! Shame on me! I will get right on it!

  2. BN: I like carrot cake, but I have never made one. Where’s the beautiful photo that makes me drool?? I know you’ve got one somewhere…
