  1. Trim the ends from the boy choy and wash well. Cut each head in half and then into 1/2 inch pieces.
  2. Heat oil in heavy skillet over high heat. Saute bok choy in hot oil until just beginning to soften, about 1 - 2 minutes. Stir garlic, ginger, and red pepper flakes into the bok choy mixture. Saute until garlic and ginger are fragrant, about 1 minute more.
  3. Stir soy sauce, and sesame oil into the bok choy mixture; saute about 1 minute more. Sprinkle with toasted sesame seeds.
Recipe Notes

Sesame seeds can be toasted in advance is a dry non stick skillet over medium heat.
