There is absolutely nothing wrong with using a light beer in this recipe. I prefer to use Club Soda for a light and crispy coating, much like tempura. Perfect for fish or vegetables. For a gluten free version use Rice flour instead of all purpose flour.

  1. Pat fish or vegetable very dry with paper towels.
  2. Whisk together the flour, salt and cayenne pepper. Add beaten eggs and club soda and whisk to form a smooth batter.
  3. Heat oil in a deep pan to 350 - 365 degrees.
  4. Lightly dust fish or vegetables with reserved flour. Dip into batter to coat well. Let excess dip off and fry until golden brown. Turn and fry the other side.
  5. Once golden brown, remove and drain on paper towels. Sprinkle with kosher or sea salt while hot.
Recipe Notes

*  Peanut oil, grape seed oil or vegetable oil are all suitable for frying.

The amount of oil you will need depends on the depth of your pan.   Do NOT over fill your pan - allow enough oil to come about half way up the food allowing room for the oil to expand and the food to displace a certain amount of oil.
