Preheat oven to 325 degrees F (165 degrees C). Butter and flour one 9x5 inch loaf pan.
Mix together the eggs, buttermilk, oil and bananas, until thoroughly combined.
In a separate bowl, mix together the sugar, flour, baking soda and salt. Add to banana mixture and fold together with a spatula until combined. Do not over mix.
Pour into prepared loaf pan. Bake at 325 for about 1 hour 15 minutes or until toothpick inserted in the center comes out clean. If bread seems to be browning to much before it is done, tent the top with foil to prevent over browning.
Cool in pan for 5 minutes. Invert onto wire rack to cool completely before slicing.
3 mini loaf pans may be used - reduce baking time accordingly.
