  1. Bring a large pot of salted water to a boil and cook noodles according to package directions. Drain and rinse in cold water.
  2. Combine peanut butter, soy sauce, rice vinegar, sesame oil, Chili Garlic sauce, brown sugar, pepper, ginger, garlic, and water. Blend to combine. (An immersion hand blender works well for this.) Add additional water to thin to desired consistency.
  3. In a large bowl add chicken and vegetables. Toss chicken and vegetables with about half of the dressing. Add noodles and remaining dressing. Toss to coat. Garnish with roasted peanuts.

Chinese Egg Noodles

These are the noodles I use. The package doesn't have good cooking instructions, I found they only need about 6 minutes.

Spaghetti or linguine work well.
