  1. Cook Uncle Ben's Jasmine Ready Rice according to package directions.
  2. In large skillet, brown ground chicken over medium heat, about 10 minutes. Drain and return to skillet. Add stir fry sauce to chicken, along with celery, green onions, grated carrot and water chestnuts. Stir to combine over low heat until just heated through.
  3. Fill each lettuce leaf with a scoop of Jasmine rice and top with a scoop of chicken.
Recipe Notes

Ground turkey or pork can be used in place of ground chicken.   A handful of cashews or peanuts added at the end is also a nice addition.

Any favorite stir fry sauce may be used, I prefer Trader Joe's brand.

Although this recipe calls for romaine lettuce, crispy iceberg lettuce cups work very well and hold a bit more filling.
